Who doesn’t love cozying up with a nice, hot bowl of soup on a cold fall night?
Today I’m sharing a recipe I recently found that was so delicious! Most of the ingredients are things you might even just already have in your kitchen, which is definitely a bonus in my book!
Anyone that knows me knows that 1. I hate cooking, and 2. I used to be vegetarian (for almost 4 years) so I’m very picky when it comes to my meat consumption. So all things considered, this recipe was great for me! It was super easy to put together and didn’t require a ton of attention or skill – great for moms or people that can’t cook like myself!
So here’s the recipe…
- In a large saucepan, combine the chicken, chicken broth, corn, beans, tomatoes, chili powder, and cumin and mix well.
- Bring to a boil.
- Reduce heat, simmer uncovered for 30 minutes.
- In a small bowl, mix the cornstarch with 2 tbsp water until smooth.
- Gradually stir into the soup.
- Bring to a boil again and cook another 5 minutes.
- Serve and enjoy!
I changed it a little because I just used what we had in the cupboards which weren’t exactly what was supposed to be in it, but it turned out so good! Also, I feel like calling it soup is a bit of a stretch – it seems like more of a chili when all is said and done, but it’s delicious either way.
I added 1 more cup of corn cause it didn’t look even compared to the ratio of tomatoes and beans, and I didn’t have a can that had the tomatoes and green chilies mixed, so I added about 3/4 of a tiny can of chilies. We also added sriracha afterward for a little extra spice which improved the flavor a bit if you’re into that!
